this looks really yummy! i'll admit that i am pretty sure i've never eaten a beet in my entire life. but i saw a Good Eats episode about them and Alton piqued my interest. and now that i've seen this, i'm definitely ready to give them a try!

Peter, LOL! I have these really crappy biscuit cutters (as in, they are deformed and they have a bad handle on them). What I really wanted to do was have the goat cheese and pine nuts sandwiched between the beets and be nice and tall and round but I don't have a nice round cutter or ring mold. But it turns out, these biscuit cutters actually made the shape kinda cool afterall.

I have to admit I hated beets when I was little, haven't had them now I'm grown up to see if my tastes have changed.

Hummm... since my family is Russian, we have ALWAYS had beets. In just about all possible incarnations. I love them, and I already have brainwashed my 19 month old to love them too. I am having a much tougher time with my husband, 100% pure Michiganian that he is, he will not come anywhere near beets. His loss. But I will try to tempt him one more time with this dish.
I tried beets again not too long ago and I really enjoyed them. That salad looks really good. Nice presentation!

I love beets and grew up eating them. Mom especially liked pickled beets and warm harvard beets. Beets and goat cheese two of my favorites and healthy, too. Thanks for a great presentation idea -

As you say we've been seeing beets everywhere but I must say yours impressed me the most.

Elly, I wanted to tell you that I made your beet salad as an antipasto for Easter dinner over the weekend. I ended up sauteeing some fresh spinach leaves and making those the bottom layer, topped with the beets and then goat cheese and pine nuts. I even used a round cookie cutter to make it all pretty and neat like your pictures. It got rave reviews, so thank you!!!!

I used to make pickled beets lots, but have gotten out of the habit.

ced, I am so glad that you liked this. I totally wanted to add spinach or arugula, myself, but had neither on hand that particular night. Next time!
