Wow Elly!!!! This sounds so so so good. I love eggplant! So you were a bad Greek growing up not liking eggplant, huh? That was like me with pasta as an Italian. :)

That is beautiful. I'm a tad envious -- this looks so much better than my own efforts. Still, I think Julie's own eggplant croquette looked even better -- and I think I have a clue as to why... Her croquettes were dry. I'm not exactly sure why that is, but I think it might be because were left to rest for a while, before being fried -- in the fridge. Well, that's my theory, hehehe. I'll be sure to let you know if it pans out. :)
