I totally agree...I'm not the biggest "fish" fan but I try to incorporate it sometimes in my cooking. I love the tomatoes in this and the quinoa (which I need to try as well).
This sounds like another dish I'll have to try for getting more fish in my diet. I'm not the biggest fan of fish either, not that I dislike it, but like you prefer other things.

That looks great Elly! I like tilapia too - it is my favorite of the no-taste fish as I like to call them. I prefer fishy fish, but when all else fails and I have to make white fish I go with tilapia!

I love fish but I had actually quit making Tilapia because it was so bland and I couldn't find a way to fix it that was tasty. I think I might try this (or my own take on it) but where, exactly, do the 13 grams of fat come from? I guess from the olive oil. Oh well, it's all good fat then.

8gurl, yep the fat is from the olive oil for roasting the tomatoes and then the little bit of pesto (so a little more olive oil and cheese), but like you said, it's all good fat! :)

Yeah for good fat! I'm so worried about my cardiovascular health lately sometimes I'm tempted to turn up the bottle LOL! But seriously I cook with it every day, on my chicken, fish, and all my veggies. EVOO in the pan and a little more drizzled on top for good measure. Can't wait to try your recipe it sounds delish! I've never made pesto and I don't have a food processor. Any ideas? Semi-homemade possibly?
hmm, do you have a blender? you could try that. otherwise, i say just buy some ready-made or maybe just make more of a basil oil (without pine nuts) than a pesto.

I do have a blender. It's nothing fancy though. All I've ever made in it is frozen drinks and milkshakes. I didn't know that pesto had pine nuts in it. I thought it was just basil, garlic and olive oil (I think that's how I saw them make it on that horrible Magic Bullet infomercial LOL). Pine nuts are expensive gosh! I don't think I can justify spending that much for something that nobody but myself would eat. I think I'll just go the semi-homemade route and buy some ready made pesto and then just go from there with the lemon and tomatoes. Thanks for the advice! I'll blog it when I give it a try.

I love fish as well as pesto so I would have no problem with this dish! I think it would also go well with a bit of spinach alongside the tomatoes. :)
