I have watched Giada, Rachael, Tyler, Bobby, Mario and The Barefoot lady all make risotto on FN. I'm sure Alton Brown has done a show about it too just to explore the science of the dish. I've never made it but I'm definitely going to give it a try very soon. This looks very tasty!

Risottos are one of the most comforting dishes. Elly, thanks for introducing Giada's dirty risotto, I missed this one.
I missed this episode as well, but that looks incredible. I may have to add that to the try-it-soon file.

Risotto is one of my favorites. this one with sausage, pancetta and lots of vegetables sounds like a pretty tasty meal.
I'm with you - pancetta, sausage, risotto, and garlic - what's not to like! It's also lovely. I once made a barley risotto that wasn't half bad - it's almost like whole wheat risotto....
What I like about riece dishes like these is that they require no meat in order to be satisfied.

I keep thinking the same thing - maybe brown rice risotto? No, wouldn't work.

I make it lots, anyway, life is short! But I do put in lots of veg....

I am Italian, so it goes without saying there's nothing I love more than risotto. Yes, you're right, there is no way to make a low-cal, healthier risotto, but that's not the point of risotto. Risotto is about indulgence, and what we call a "piatto unico" (a solo dish). It's not meant to be an entree, it <b>is</b> the meal.
