Oh my gawd...Elly you always make the best food! Cardoons...is that the same as "cardos" in Spanish I wonder? They sort of look like celery stalks? This requires further research on my part, I think. lol Awesome pic and delicious recipe! :)
Yes! It is one and the same thing. :) Cardoons = Cardos. I am going to have to give these a try...I've only ever seen them jarred (the stems) and thought they were like celery...my bad...so I hadn't bothered to try them...that will be a changin' soon! :)
I love artichoke heart in anything. I also love all the colors in this dish. Looks great.

Thanks for this idea, Elly. I brought back some orzo the last time I visited the US, made some salad and still have 2 packets remaining. I'll try to get some pancetta and make this. Looks fab as usual.
